Mumbai
TÓA 66
This all-vegetarian Thai restaurant serves piquant flavours in a charming, sunlit setting in Churchgate. Sample a 7-course tasting menu crafted by husband and wife chef duo Kanchit and Natanong Vongvicha as you enjoy dishes such as Thai-style protein balls drenched in tom yum sauce, larb tofu served two ways, slow-brewed noodle soup and Thai basil fried rice. For a sweet finish, try desserts like the traditional tub tim krob featuring ruby-hued water chestnut and chilled coconut milk, as well as zero-proof cocktails like Bad Thai, which is a play on the classic, aromatic Pad Thai.

Loya at the Taj Mahal Palace
For the first time in 20 years, the Taj Mahal Palace, Mumbai, has a new opening, and it’s Loya, following successful launches in Delhi and Bengaluru. This new outpost continues to honour the essence of North Indian cuisine while incorporating elements that reflect Mumbai’s vibrant spirit. Chef Rajesh Wadhwa emphasizes that Loya’s Mumbai location retains its deep connection to North Indian culinary roots while embracing the city’s dynamic, evolving dining culture. To achieve this, the menu incorporates coastal influences, such as locally sourced seafood prepared with traditional techniques, and seasonal adaptations to suit Mumbai's tropical climate.

Delhi
Roma
Step inside this new bistro offering comfort fare in a sophisticated setting inspired by a grand Roman villa in hues of deep blues and gold, complete with tall colonnades, trellis, artwork and mosaic tiles. An eye-catching courtyard-like setting features a water body paying homage to the iconic Trevi Fountain. Savour dishes from the menu such as brie and berry toast, butternut squash ravioli and the Roma torte for a sweet finish. The bar program features timeless classics and innovative tipples.

Daisy Mae Cantina
Daisy Mae Cantina, located in the heart of Khan Market, brings Mexican flavours to the capital city. The menu features dishes like Street-Style Birria Tacos, Jackfruit Carnitas Tacos, and Chipotle Black Bean Bowls, offering hearty options for both meat-lovers and plant-based diners. The cantina's vibrant atmosphere, with colourful murals and neon signs, creates a lively setting, and special events like taco-eating contests, tequila tastings, and mariachi performances add to the fun.

Hyderabad
Akina
After two successful years in Mumbai, Akina, the contemporary Asian dining hotspot, has expanded to Hyderabad. This new outpost down south boasts a 12,000-square-foot space, complete with an expansive rooftop space, a turquoise pool, and a mix of bamboo, rattan, and terrazzo accents. Akina brings with it a feast of modern Asian flavours while also incorporating local influences. As for the space? The venue’s design adapts seamlessly for both daytime business lunches and a buzzy night out.

MOAI
The Lion City has another sprawling address for cocktails and fine dining—this time spread over a massive 24,000 sqft with indoor-outdoor dining, making for an immersive escape in the bustle of the city. Here, the design is inspired by natural forms featuring quarry-cut walls, granite floors, lush greens and water bodies. Towering 15-ft Moai sculptures, found on Easter Island in Polynesia, make a focal point. Savour global-inspired dishes such as dum ka kheema, muhammara, and feta served on a pomegranate waffle and maamoul cheesecake.

Goa
Janot
Portuguese for elegance, Janot is leading a revolution of its own through an experimental approach. This cuisine-agnostic menu, led by Avinash Martins, is shifting the focus to quality ingredients presented with refinement. Interiors boast a sophistication that mirrors the food—urban, contemporary and not shy of making a statement. What might stand out to you upon a visit is the microgreen wall, lined with freshly grown greens that are then handpicked and incorporated into dishes to infuse the freshest flavours into your plate. The restaurant's favourites? They urge you to get a bite of Hay-Smoked Danish Duck or the Burnt & Charred Belgian pork belly.

Farzi Beach
Situated at Mayfair On Sea in Morjim, Farzi Beach presents a contemporary approach to Indian cuisine, combining classic flavours with creative, modern interpretations. This new addition to Goa's dining scene is the latest venture by Zorawar Kalra. While the menu at Farzi Beach features a unique fusion of Modern Indian, Goan, Italian, and Pan-Asian influences, don’t miss the cocktail menu which features drinks such as the Chuski Margarita, Goan Mule, and Kokum Collins, crafted to suit the Goan climate.
